			<content:encoded><![CDATA[<p>August 29th, 2010 will mark the Five Year Anniversary of Hurricane Katrina&#8217;s landfall in New Orleans. When I went to New Orleans to work on an editorial shoot in 2008 I was surprised at how the city looked like it had been hit by the storm months ago instead of years ago. This September I am showing photos from my trips to New Orleans at Periscope Cellars&#8217;s Gallery. The opening is on September 3rd from 6 to 9PM. Profits from the print sales will go to Habitat for Humanity and Make it Right; charitable organizations which are working to help New Orleans rebuild.<br />

<p>When I was in New Orleans last September I ate at a wonderful restaurant called <a href="http://www.herbsaint.com" target="_self" onclick="pageTracker._trackPageview('/outgoing/www.herbsaint.com?referer=');">Herbsaint</a>. I decided to let the bartender choose my first drink by asking him, &#8220;If I&#8217;m only going to have <em>one</em> drink in this town, and that drink is going to be in this bar, what should I have?&#8221; His answer was &#8220;A Sazerac.&#8221;</p>

<p>&#8220;The Sazerac&#8221; he continued, &#8220;was invented in New Orleans and was possibly the first cocktail ever.&#8221; He began making the drink with what seemed like a superfluous act, filling up a highball with ice and water only to later dump it out into the sink. A tiny amount of Herbsaint Liquer was poured into the glass, swirled around and quickly poured out. He then measured out some Rye whiskey and simple syrup, added a dash of bitters, wiped the edge of the glass with a lemon peel and then threw the peel away. Which was my favorite part of the process. The drink itself had a strong and distinct whiskey flavor but with a few complexities that made it go down easy. It has since replaced the scotch on the rocks as my drink at home but I don&#8217;t think I plan to order it any bars outside of the south.</p>
<p>The Recipe:</p>
<p><span style="x-small;">Crushed ice<br />
1 teaspoon <a href="http://www.internetwines.com/rws28043.html" target="_self" onclick="pageTracker._trackPageview('/outgoing/www.internetwines.com/rws28043.html?referer=');">Herbsaint Liqueur</a><br />
Ice cubes<br />
1 teaspoon simple syrup or </span><span style="x-small;">1 teaspoon sugar, or 1 sugar cube.</span><br />
<span style="x-small;"> 1 1/2 ounces <a href="http://www.shoppersvineyard.com/product_new.asp?pID=35129&amp;utm_source=Vinquire&amp;utm_medium=WineFeed&amp;utm_term=winebottle&amp;utm_campaign=base" target="_self" onclick="pageTracker._trackPageview('/outgoing/www.shoppersvineyard.com/product_new.asp?pID=35129_amp_utm_source=Vinquire_amp_utm_medium=WineFeed_amp_utm_term=winebottle_amp_utm_campaign=base&amp;referer=');">Sazerac Rye Whiskey</a><br />
3 dashes of <a href="http://www.internetwines.com/rws29320.html" target="_self" onclick="pageTracker._trackPageview('/outgoing/www.internetwines.com/rws29320.html?referer=');">Peychaud&#8217;s Bitters</a><br />
1 small lemon peel<br />
</span></p>
<p><span style="x-small;">Chill a highball glass by filling with  crushed ice and water. Add the Herbsaint to the glass and coat the inside of the glass with it. Discard the excess. It&#8217;s important to have the glass already chilled with ice water because it allows the Herbsaint to easily coat the glass and be discarded, otherwise the Anise taste is too strong.<br />

<p><span style="x-small;">In a separate glass shake the sugar, rye whiskey, and bitters over ice; strain into the highball. Fold the lemon peel over the rim, wipe the inside and outside once and discard the peel.<br />
</span></p>
<p><span style="x-small;">Done.<br />

I was expecting it to still be bad but wasn&#8217;t expecting it to affect me as much as it did.</p>

<p>Inside, the park was quiet and still.  Judging from the number of abandoned air compressors, there had been at one time a much larger clean up effort that had since been given up. Somewhere on the grounds there was a small construction crew reclaiming scrap metal from the rides. We were able to spend about 45 minutes exploring before one of the crew found us and asked us to leave.</p>
<p>Like all amusement parks, Six Flags New Orleans chose a theme for its few decorations but never worried too much about the incongruities that came of it. The southern belle mannequins under the iron veranda are just around the corner from Gotham City Hall and its DC Super Heroes live action experience. The concession stands had illustrations of gators and french chefs on the outside, but had been serving Aramark hotdogs and hamburgers on the inside. Before the storm, the park was trying so hard to be New Orleans themed but was still failing. Now that its buildings had been damaged by Katrina&#8217;s 25-foot storm surge and its grounds were deteriorating from years of neglect, it fit the theme perfectly.</p>
